Modak is believed to be the favorite sweets of Lord Ganesha. Ganesh Chaturthi or Vinayaka Chaturthi is a popular Hindu festival that celebrates the birth of Lord Ganesha. Ganesh Chaturthi is the birth of the elephant-headed deity Ganesha. Lord Ganesh is believed to be the god of prosperity and wisdom. He is considered as Vighnaharta, who removes all obstacles in life.

Hindus believe that Ganesha loves Modak hence he is also called  Modakpriya. The specialty of this festival is the ‘Modaks’ which is the sweet dumpling considered as the favorite food of Lord Ganesha. He is also worshipped at the beginning of every work in Sanatana Dharma.

I am sharing a unique twist Modaks. What happens when Modaks and Cookies become best friends, Modak Cookies are born.

Chocolate-Dipped Modak Cookies

Prep Time 5 minutes
Cook Time 1 hour 30 minutes
Servings 8
Melt in Mouth delicious butter Modak cookies made with wheat flour and jaggery, dipped in dark chocolate, and garnished with gold foil🌸

Ingredients

  • 1/2 cup Salted Butter (room temperature)
  • 1/4th cup jaggery powder (sugar powder can also be used)
  • 1/2 tsp Vanilla extract
  • 1 cup Wheat Flour (Atta)
  • 2 tbsp Custard powder/Cornflour
  • 1/2 cup Dark melted chocolate
  • Gold foil (for garnishing)

Instructions 

  • In a bowl, beat butter for 2 mins. Add jaggery powder and beat for 3- 4 mins till light and fluffy.
  • Add vanilla extract and combine.
  • Sieve the wheat flour, custard powder and combine gently with the butter jaggery mixture till it forms a smooth soft dough. Don't over-knead the cookie dough.
  • Create Modak shapes using Modak molds with the cookie dough.
  • Once the Modak cookies are ready, place them on a plate and refrigerate them for 1 hour.
  • Line the baking tray with 3 baking papers or a silicone sheet. Place the Modak cookies on the baking tray.
  • Bake in a pre-heated oven @170* C for 12-15 mins or till golden brown.
  • Once the cookies are nicely baked, cool completely.
  • Dip the tip of Modak cookies in melted dark chocolate.
  • Garnish the Modak cookies with gold foil.
  • Melt in mouth buttery Modak cookies are ready.
  • Enjoy!

Notes

  1. You can swap wheat flour with all-purpose flour.
  2. You can swap jaggery powder with sugar powder.
  3. for more sweetness of cookies, 2 tbsp more jaggery/sugar powder can be added.
  4. Don't over-knead the dough. It will lead to hard dense cookies.
  5. Make sure to line the baking tray with 3 baking papers to avoid cookies burning from the bottom. Alternatively, a silicone sheet can also be used.

Sugar-Free Modak

Prep Time 2 minutes

Delicious nutty and sugar-free Modak is healthy and super easy to make. Made with dates and crunchy nuts, this healthy treat can be enjoyed throughout the year

Ingredients

  • 300 grams Dates (used Mejdool dates)
  • 1/4th cup Raisins
  • 1/4th cup Walnuts (roughly chopped)
  • 1/4th cup Almonds (roughly chopped)
  • 1/4th cup Cashewnuts (roughly chopped)
  • 1/4th cup Pistachio
  • 2 tbsp Desiccated coconut
  • 1 tbsp Poppy seeds
  • 3 tbsp Clarified Butter (ghee)
  • 1 tsp Cardamom powder
  • 1 tbsp Dried rose petals (optional)

Instructions 

  • Firstly, De-seed the dates. Add raisins and grind to a smooth paste. Keep aside.
  • Grind walnuts, almonds, cashew nuts, and pistachio to a coarse powder. Keep aside.
  • In a pan, put ghee. Once the ghee melts, add the coarse nuts, desiccated coconut, and roast for 2 mins on low flame.
  • Add dried rose petals, poppy seeds and roast for 1 min more. Add cardamom powder and combine.
  • Make a well in between and add ghee and pureed dates. Combine and cook for 2 mins. Combine with nuts and cook for 1 min more on low flame.
  • Transfer the mixture to a bowl. Mix and make a dough with a spatula. Cool the mixture.
  • To make Modaks, grease the Modak molds with ghee and create Modak shapes.
  • Delicious healthy sugar-free Modaks are ready.

Notes

  1. I have used Mejdool dates as I love the texture, quality, and sweetness of these dates. You can use any dates of your choice.
  2. If you don't have Modak molds, you can simply make Ladoos from the mixture.

Choco Nut Squares/Barfi

Chocolate Nutty squares or barfi is a quick, easy and decadent sweet prepared in just 15 mins.

Ingredients

  • 1 tbsp Cocoa powder
  • 2 tbsp Milk
  • 1/2 cup Condensed milk
  • 1 tbsp Butter (salted)
  • 1/2 cup Cashewnut powder (coarse)
  • 1/2 cup Digestive biscuit powder (coarse)
  • 2 tbsp Walnut (chopped)
  • 2 tbsp Almonds
  • 1/2 cup Dark chocolate (chopped)
  • 1 tsp butter (salted)
  • 1/4th cup White chocolate (melted)

Instructions 

  • In a pan, combine milk and cocoa powder till lump-free. Add condensed milk and combine well.
  • Cook on medium flame and mix. Add butter and cook till butter melts. Stir continuously to avoid burning. Once the mixture comes to a boil, switch off the flame.
  • Add cashew nut powder, digestive biscuit powder and combine well.
  • Now, switch on the flame and cook the mixture for 2 mins on medium flame.
  • The Mixture thickens and separates from the pan after 2 to 3 mins. Switch off the flame.
  • Add walnuts, almonds, and combine. The Chocolate mixture is ready to set.
  • Transfer the mixture to a 5-inch square dish lined with baking paper. Level the mixture.
  • Melt dark chocolate and butter. Pour it on the mixture and level it. Decorate with melted white chocolate.
  • Refrigerate for 2 hrs or till set.
  • Cut in squares and enjoy!

Notes

  1. Melt the chocolate in the microwave or double boiling method.
  2. Any biscuits like parle-g, digestive, chocolate biscuits can be used of your choice.
  3. Cashewnut powder can be swapped with almond powder which will also taste equally delicious.
  4. Refrigerate and store in an air-tight container for up to 1 week.

In India, the street vendors prepare aloo chaat in an iron griddle, in which diced potatoes are fried to perfection until crisp and golden brown while at home potatoes can be shallowly fried, baked or air-fried.

Aloo Chaat is a popular street food snack from North India and the easiest chaats to make. Potato cubes deep fried or shallow fried till crisp and golden brown and tossed with basic chaat chutneys that are tamarind chutney and green coriander chutney, onions, ginger, green chilies and flavored with spices and garnished with sev and chaat masala. I have also added fried peanuts for that extra crunch. This Aloo chaat is a super addictive and mouth-watering snack with a melange of sweet, sour, hot, and spicy tastes. Aloo Chaat

Tangy Spicy Aloo Chaat

Ingredients

Frying Potatoes

  • 7 pc Boiled potatoes (80% boiled and cooled completely)
  • Oil (for frying)

Aloo Chaat preparation

  • 1 tbsp Ginger (thinly sliced)
  • 1 Green chilli (chopped)
  • 1 tsp Roasted cumin powder
  • 1 tsp Red chilli powder
  • 2 tsp Chaat masala
  • 1/2 cup Onion (chopped)
  • 2 tbsp Tomato (chopped(optional))
  • 2 tbsp Peanuts (roasted/fried(optional))
  • 2 tbsp Green coriander chutney
  • 1 tbsp Tamarind chutney
  • 2 tbsp Bhujia (sev)
  • 1 tbsp Lemon juice
  • Fresh coriander leaves

Instructions 

Frying Potatoes

  • Potatoes should be 80% boiled and cooled competely for 2 hours.
  • Peel the potatoes and cut in medium pieces.
  • Fry them in hot oil on high flame till the outer layer of potatoes turns golden brown. Then fry on medium flame till crisp and golden brown.

Aloo chaat preparation

  • Transfer the potaoes in a bowl. Season with rock salt and mix well.
  • Add ginger, green chillies, red chilli powder, roasted cumin powder, chaat masala and combine well.
  • Add onions, tomatoes, peanuts, green chutney, tamarind chutney, bhujia, and combine well.
  • Add lemon juice, and fresh coriander. Toss gently.
  • Serve hot in a chaat bowl and garnish with ginger, coriander leaves, bhujia, and chaat masala.
  • Tangy spicy aloo chaat is ready to relish.

Notes

  1. Potatoes have to be only 80% boiled and should be cooled completely.
  2. The most popular Delhi-style aloo chaat is made by deep-frying the aloo. Potatoes can be fried or shallow fried in hot oil.
  3. For a healthier option, potatoes can be roasted in Tawa with minimum oil, grilled or baked in the oven, or air-fried. Totally your choice.
  4. For crispy potatoes, fry them on high flame till the outer layer is brown, then fry on medium flame till crisp and golden brown.
  5. For variation, Aloo chaat can also be garnished with thick curd/dahi, tamarind chutney, then the spices, coriander, and bhujia if you like.
  6. Tomatoes and peanuts are optional in this recipe. You can totally skip it.

Rasmalai fudge is a delicious rich creamy & fudgy fusion dessert made in few minutes with aromatic flavours of rasmalai which is a popular and delicious Bengali sweet.

Ingredients

  • 1 tsp Salted butter
  • 200 grams White chocolate chips (or white chocolate slab finely chopped)
  • 100 grams Condensed milk
  • 1 tbsp Warm Saffron milk
  • 1/4th cup Pistachio
  • 2 tbsp Dried rose petals
  • 1/2 tsp Cardamom powder
  • Pistachio silvers (for garnishing)
  • Dried rose petals (for garnishing)
  • Saffron (for garnishing)

Instructions 

  • Take a heavy bottom pan.
  • Add butter,white chocolate chips and condensed milk. Cook on low flame till all combined.
  • Once combined, add warm saffron milk and combine well. Switch off the flame.
  • Add pistachio, dried rose petals and cardamom powder and combine well.
  • Transfer the mixture in a square dish lined with baking paper.
  • Level the mixture with a spatula and garnish with pistachio silvers, dried rose petals and saffron. Press gently.
  • Refrigerate for 2 hours to set.
  • Once set, let it come to room temperature.
  • Cut into squares.
  • Enjoy !

Notes

  1. Use a heavy bottom pan and cook on low flame to avoid burning of chocolate.
  2. You can also microwave the mixture at every 20 second interval till it's is melted and combined.
  3. The double boiling method can also be used to melt the mixture till it is combined.
  4. Play with this recipe to create as many fusion recipes of your choice.

Bread Rasbhari

Ingredients

Creamy Custard Milk

  • 1 litre Full-fat milk
  • Few strands Saffron
  • 1/2 cup Sugar
  • 2 1/2 tbsp Custard powder
  • 1/4th cup Milk
  • 1 tsp Cardamom powder
  • 1 tbsp Almonds (chopped)
  • 1 tbsp Pistachio (chopped)
  • 1 tbsp Cashewnuts (chopped)
  • 1 tsp Dried rose petals (for garnishing)
  • 1/4th cup *Fresh Cream (optional *see notes)

Roasting Bread

  • 5 slices Bread (white/brown)
  • 2 tbsp Clarified butter (ghee)

Instructions 

Creamy Custard Milk

  • Combine Custard powder and milk till no lumps. Keep aside
  • Take a heavy bottom pan. Pour milk and cook on high flame till it boils. Stir the milk continuously. Once the milk boils, cook on low flame.
  • Add sugar and saffron and combine.
  • Add the prepared custard mixture to the milk. Cook on medium flame till the milk has a medium-thick consistency. Stir continuously to avoid custard mixture sticking on the bottom of the pan.
  • Once the milk has a medium-thick consistency, add cardamom powder, nuts and cook for 1 more min.
  • Transfer and cool completely.
  • Refrigerate for 1 hour.

Roasting Bread

  • Cut the bread slices in squares.
  • Take a heavy bottom pan.
  • Add ghee. Once the ghee melts, spread the bread croutons and roast on low flame till crisp and golden brown from both sides. Keep flipping to avoid burning of bread.

Assembling

  • Take the chilled custard milk. At this time fresh cream can be added to the milk mixture for a more creamy and rich taste. Then, add bread croutons into it and dip them completely.
  • Garnish with nuts, saffron, and dried rose petals.
  • Refrigerate for 30 mins or till completely chilled.
  • Serve Chilled and enjoy!

Notes

  • Make lump-free custard mixture and mix nicely before pouring into the milk.
  • To avoid burning, stir the milk mixture continuously to avoid custard setting on the bottom.
  • Roast the bread croutons on low flame and keep flipping to avoid burning.
  • *Fresh cream can be added to the chilled custard milk for a more rich creamy taste.
  • The custard milk should be chilled before add bread croutons to it.

Pasta Arrabbiata

Pasta boiled to perfection,sautéed with lots of garlic & onion, and made with my special homemade fresh Arrabbiata Pasta Sauce which is a star recipe, very versatile makes it absolutely flavourful & which takes this dish to the next level and topped parmesan cheese. Serve it with crispy garlic bread.

Ingredients

Boiling Pasta

  • 1 1/2 cup Pasta (penne)
  • 4 cups Water
  • 1 tsp Salt
  • 1 tsp Light olive oil

Homemade Pasta Sauce

  • 4 cups Water
  • 7 pcs Tomatoes
  • 3 pcs Kashmiri chilli
  • 3 pcs Guntur chilli
  • 1 small Carrot (chopped)
  • 2 tbsp Beetroot (chopped)
  • 1 small Red capsicum
  • 8 cloves Garlic

Pasta Preparation

  • 1 tbsp Light olive oil
  • 2 tbsp Garlic (chopped)
  • 1 Onion (chopped)
  • 2 Tomatoes (chopped)
  • Salt to taste
  • 1 tsp Sugar
  • 2 tbsp Basil leaves (chopped)
  • 1 tsp Red chilli flakes
  • 1/4th tsp Black pepper powder
  • 1 tsp Oregano
  • 1 tbsp Tomato ketchup
  • 1 tbsp Butter
  • Parmesan cheese (grated)

Instructions 

Boiling Pasta

  • Boil water in a pan. Add salt & oil. once the water boils, add pasta and cook for 7-8 mins or till 90% cooked.
  • Once pasta is cooked, sieve it and rinse with cold water to stop the cooking process. Keep aside.

Homemade Pasta Sauce

  • Make a X on tomatoes. Put the tomatoesin boiling water along with chillies,carrots, red capsicum, beetroot and garlic.
  • Cover and Boil for 7 to 8 mins on high flame. Once the tomatoes and veggies turn soft, sieve and reserve the vegetable stock.
  • Cool and Peel the tomatoes. Chop 3 tomatoes finely and remaining tomatos, grind with veggies, garlic and chillies to a fine puree.

Pasta Preparation

  • Take oil in a pan.Once hot, add garlic. Add onions and sute for 1 min.
  • Add chopped tomatoes and sute for 1 min. Add homemade pasta sauce, salt, sugar, fresh basil leaves and combine well. Add reserved vegetable stock & mix. Cover and cook on low flame for 5 mins
  • Add Red chilli flakes,oregano, black pepper powder, tomato ketchup and butter. combine and cook for 2 more mins.
  • Add boiled pasta and combine gently with the sauce. add few basil leaves and butter. Cover and cook for 2 more mins.
  • Pasta Arrabbiata is ready.
  • Transfer in a serving bowl and garnish with parmesan cheese and basil leaves.
  • Enjoy hot with crispy Garlic Bread.

Notes

  1. For Perfect Pasta, boil the noodles till 90% cooked. Don't overcook them.
  2. Once boiled, sieve & rinse the pasta immediately with cold water to stop the cooking process.

Chatpata Protein Salad

My Healthy & Refreshing Summer Salad is full of protein loaded with chickpeas, kidney beans, tofu or paneer, tomatoes, onions, red capsicum, and refreshing Minty salad dressing & roasted peanuts for an extra crunch. This salad is spicy tangy & Flavourful.
 

Ingredients

Tangy Minty Salad Dressing

  • 2 tbsp Lemon juice
  • 2 tsp Extra virgin olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper powder
  • 1 tbsp Chaat masala
  • 1 tsp Carom seeds
  • 1 tsp Roasted cumin powder
  • 2 tbsp Mint leaves (chopped)

Salad Ingredients

  • 1 cup Chickpeas (boiled)
  • 3/4th cup Kidney beans (boiled)
  • 1 small Cucumber (sliced in half)
  • 1 small Onion (sliced in half)
  • 1 small Tomato (sliced in half)
  • 1 small Capsicum (sliced in half)
  • 1/2 cup Paneer/Tifu (cubed)
  • 1/4th cup Peanuts (roasted)

Instructions 

Tangy Minty Salad Dressing

  • In a small jar, mix lemon juice, extra virgin olive oil, salt, black pepper, chaat masala, carom seeds, roasted cumin powder, mint leaves, and shake well. Salad dressing is ready.

Salad Preparation

  • In a bowl, mix boiled chickpeas, kidney beans, cucumber, onion, tomato, capsicum, paneer/tofu, and roasted peanuts and combine .
  • Add the salad dressing to the mixture and combine gently.
  • Transfer in a salad bowl and Serve chilled.
  • Enjoy this refreshing tangy protein salad.

Cherry Almond Tea Cake

The buttery cherry almond tea cake is made with wheat & almond flour, with fresh juicy cherries for that fruity flavour & roasted sliced almonds for that extra crunch with sprinkled sugar for caramel flavour.

Ingredients

Cherry Almond Cake Batter

  • 1/2 cup Salted Butter (room temperature)
  • 1/2 cup Condensed milk (room temperature)
  • 4 tbsp Powdered sugar
  • 1 cup Wheat flour (atta)
  • 1/4th cup Custard powder/Cornflour
  • 1/4th cup Almond flour
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 cup Milk (room temperature)
  • 1 tsp Vanilla/Cherry essence
  • 1/2 cup Cherries (chopped)
  • 1/4th cup Almonds (roasted & sliced)
  • 1 tbsp Sugar

Instructions 

Cake batter

  • Take salted butter in a bowl and beat for 1 min. After 1 min, the butter will turn light in colour.
  • Add condensed milk to the butter and beat for 1 min.
  • Add powdered sugar and beat for 5 mins. After 5 mins, the mixture will be light and fluffy.
  • Sieve wheat flour, custard powder, baking soda and baking powder. Add almond flour & milk and vanilla essence. Beat till all combined. Don't over-mix the batter.
  • Add freshly chopped cherries and roasted sliced almonds and fold the batter gently till all mixed.
  • The cake batter is ready.
  • Grease an 8-inch loaf tin and line with baking paper.
  • Transfer the cake batter to the tin & level it. Garnish with cherries and almonds. Sprinkle sugar on top.
  • Bake in a pre-heated oven @ 180*C for 30 - 35 mins or till it comes clean.
  • After the cake is baked, take it out immediately from the oven and cool completely.
  • Slice it and enjoy this delicious bake with a hot cup of coffee or milkshake.

Notes

  1. If fresh cherries are not available, you can swap them with raisins, dates, nuts of your choice.
  2. All the ingredients used should be at room temperature.
  3. Wheat flour can be swapped with all-purpose flour.
  4. If you don't have a loaf tin, you can bake this cake in a 6 or 7 inch round cake tin.
  5. Cake batter should not be overmixed which will lead to a dense cake.
  6. Bake the cake in the middle rack of the oven with both the modes on.
  7. Cake can also be baked in a pan or pressure cooker in gas. It will take 40 - 45 mins.

Chilli Garlic Hakka Noodles

Noodles boiled to perfection,sautéed with lots of garlic & stir-fried veggies and made with my special home-made garlic sauce which is a star recipe, very versatile makes it absolutely flavourful & takes it to the next level.

Ingredients

Home Made Chilli Garlic Sauce

  • 10 pcs Kashmiri red chilli
  • 15 pcs Guntur chillies
  • 1 cup hot water
  • 15 cloves Garlic
  • 1 tsp Salt
  • 1 tsp Sugar

Boiling Noodles

  • 150 grams Hakka noodles
  • 6 cups Water
  • 1 tbsp Refined/Olive oil

Chilli Garlic Veg Sauce

  • 3 tbsp Refined/Olive oil
  • 1/4th cup Garlic (finely chopped)
  • 1 Onion (sliced)
  • 1 Carrot (julienned)
  • 1/2 cup Capsicum (sliced)
  • 2 Babycorn (julienned)
  • Salt to taste
  • 1 tsp Soya sauce
  • 1 tsp Vinegar
  • 1/4th tsp Black pepper
  • Spring onion leaves (handful)

Instructions 

Home Made Chilli Garlic Sauce

  • Soak dry chilles in hot water for 30 mins.
  • Grind soaked chilies, garlic, salt , sugar & 1/4th cup chilli water(in which chillies were soaked) to a fine paste.
  • Home-Made chilli garlic sauce is ready.

Boiling Perfect Noodles

  • Boil water with salt. Once boiled, add hakka noodles.
  • Boil for 3 mins. Seperate noodles after 1 min gently. Noodles should be 90% cooked after 3 mins. Don't over-cook.
  • Sieve the noodles. Rise with cold water immediately to stop the cooking process.
  • Once the noodles are rinsed, coat it with oil annd set aside.
  • Perfect noodles are ready.

Chilli Garlic Veg Sauce

  • Take a broad/wok pan.
  • Add oil. Once oil is hot, add garlic and saute for 1 min.
  • Once garlic turns golden brown,add home-made chilli garlic sauce and saute for 1 min on high flame.
  • Add onions & saute for 1 min. Add capsicum,carrots & baby corn & stir-fry for 2 mins on high flame.
  • Add boiled noodles, salt, soya sauce, vinegar and black pepper. Saute for 2 mins on high flame.
    Use 2 forks to combine. Using fork will avoid breakage of noodles.
  • Once combine well, garnish with spring onion leaves.
  • Street style chilli garlic hakka noodles is ready.
  • Serve hot and enjoy.

Notes

  1. For Perfect noodles, boil the noodles till 90% cooked. Don't overcook them.
  2. Once boiled, sieve & rinse the noodles immediately with cold water to stop the cooking process.
  3. Coat the noodles with oil for a non-sticky texture.
  4. Home-made chili garlic sauce can be stored for up to 1 week in an air-tight container.
  5. Always use a fork to combine noodles with sauces. Using a fork avoids the breakage of noodles.
