Schezwan Chilli Potatoes

Ingredients

Coating Potatoes

  • 350 grams Baby Potatoes (boiled & cooled completely)
  • 1 tsp Salt
  • 1 tsp Red chilli powder
  • 1/2 tsp Black pepper powder
  • 1 tbsp Cornflour
  • 1 tbsp Refined oil (Light olive oil can also be used)

Roasting Potatoes

  • Coated potatoes
  • 2 tbsp Refined oil (Light olive oil can also be used)

Schezwan Spicy Chilli Sauce

  • 2 tbsp Refined oil (Light olive oil can also be used)
  • 2 tbsp Garlic (finely chopped)
  • 1/2 tbsp Ginger (finely chopped)
  • 1 Onion (finely chopped)
  • 1 cup Capsicum (sliced)
  • Salt to taste
  • 3 tbsp Schezwan chutney
  • 1 tbsp Tomato ketchup
  • 1 tbsp Chilli sauce
  • 1 tbsp Butter
  • 1 tsp Soya sauce
  • 1 tsp Chilli flakes
  • 2 tsp Mixed herbs
  • 2 tsp Sesame seeds
  • Spring onion leaves

Instructions 

Coating Potatoes

  • Coat the boiled potatoes with salt, red chilli powde, black pepper powder,cornflour and oil.Combine well

Roasting Potatoes

  • Take oil in pan and roast the coated potatoes till golden brown & crisp.

Schezwan Spicy Chilli Sauce

  • From the remaining oil from roasted potatoes, saute garlic & ginger for 1 min on medium flame.
  • Add onions and saute for 1 min. Once onion turns translucent, add capsicum and saute for 1 min.Add salt & mix.
  • Add schezwan chutney,tomato ketchup,chilli sauce,butter,soya sauce, red chilli flakes,mixed herbs. Combine.
  • Add roasted potatoes and combine well. Add sesame seeds & combine again.
  • Garnish with spring onion leaves & sesame seeds.
  • Serve hot and enjoy.

Notes

  1. Baby potatoes should be boiled & cooled completely.
  2. All-purpose flour(maida) can also be used for coating potatoes instead of cornflour.
  3. Don't overcook the capsicums. The crunchiness of capsicums gives a nice taste to the dish.
  4. You can add more schezwan chutney according to your spice buds.
  5. The same recipe can also be made with paneer, tofu and tastes equally great.

Cheesy Healthy Pizza Muffins

Super soft & flavourful Cheesy Pizza muffins made with healthy flour, lots of veggies, instant pizza sauce, and cheese is a perfect Breakfast, Tea snack & Lunch box option for kids and everyone actually.

Ingredients

Instant Pizza Sauce

  • 1/2 cup Tomato ketchup
  • 2 tbsp Chilli/Schezwan sauce
  • 1 tsp Chilli flakes
  • 1 tsp Mixed herbs

Pizza Muffin Batter :

  • 1/2 cup Milk (plus 1 tbsp)
  • 1 tbsp sugar
  • 2 tbsp olive oil
  • 2 tbsp Fresh curd (yogurt/dahi)
  • 1/2 tsp salt
  • 1/2 cup Wheat flour (Atta)
  • 1/2 cup Semolina (suji)
  • 1 tbsp Cornflour
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 2 tbsp Onion (finely chopped)
  • 2 tbsp Capsicum (finely chopped)
  • 2 tbsp Tomato (finely chopped)
  • 1 tbsp Sweet corn
  • 1 tsp Jalapenos (finely chopped)
  • 1 tbsp Oregano
  • 1/2 tbsp Chilli flakes
  • 1 tbsp Instant pizza sauce (prepared)
  • 1/4th tsp Black pepper powder
  • 1/4th Cup Mozzarella cheese (grated)
  • 1 tbsp Back olives (sliced)

Instructions 

To Make Instant Pizza Sauce

  • In a bowl mix tomato ketchup, chilli sauce, chilli flakes, and mixed herbs and combine well. Instant pizza sauce is ready.

To Make Pizza Muffins

  • Pre-heat the oven @180* C for 10 mins & grease the muffin tray with butter.
  • In a bowl put milk, sugar, oil, fresh curd, salt and whisk well till combined.
  • Add Wheat flour, semolina, Cornflour, baking powder, baking soda, onions, capsicum, tomatoes, sweet corn, jalapenos, oregano, chilli flakes, instant pizza sauce, black pepper & mozzarella cheese. Combine and fold gently till all mixed.
  • Cover the cups with 1/2 the batter. Put some instant pizza sauce and spread. Sprinkle some mozzarella cheese. Cover with the batter and level it.
  • Garnish with some veggies, instant pizza sauce, mozzarella cheese, chilli flakes, pizza herbs and slice black olives.
  • Bake in a pre-heated oven @180*C in the middle rack for 25 mins or till it comes clean.
  • Once baked, take it out from the oven and brush the muffins with butter while its hot.
  • Enjoy these delicious cheesy savoury beauties with a hot cup of coffee.

Notes

  1. Store-bought pizza sauce can also be used.
  2. Add any veggies of your choice. Make sure they are finely chopped.
  3. Don't overmix the muffin batter. Overmixing leads to hard dense muffins.
  4. Make sure to pre-heat the oven @ 180* C for 10 mins before placing the muffins for baking.
  5. Place the muffin tray in the middle rack.
  6. You can swap wheat flour with oats flour.

World's Best Double Chocolate Chip Cookies

My best Eggless, Chewy, Double Chocolatey & Gooey Cookies are the most perfect cookies you will ever make. These sweet beauties are made with wheat flour & loads of chocolate 🍫chunks.

Ingredients

  • 1 cup Wheat flour
  • 1 tbsp Cornflour
  • 2 tbsp Cocoa powder
  • 1/3rd cup Butter (melted)
  • 1/4th cup Caster sugar/Fine sugar
  • 1/2 cup Light/Dark brown sugar
  • 1/4th cup Milk
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/4th tsp Salt
  • 1/4th tsp Instant coffee
  • 1/4th cup Choco chips
  • 1/4th cup Dark chocolate chunks

Instructions 

  • In a bowl, take caster sugar, brown sugar, and melted butter. Whisk for 2 mins.
  • Add milk and vanilla extract. Whisk for 2 mins.
  • Sieve all dry ingredients: Wheat flour, Cornflour, Cocoa powder, Baking soda, Salt.
  • Add instant coffee powder and combine & fold gently till all comes together. Don't overmix.
  • Add choco chips and dark chocolate chunks and fold gently.
  • Cookie batter is ready. Cover with a cling film and refrigerate for 30 mins.
  • After 30 mins, take it out from the fridge and shape it into balls. Use a scoop or a spoon to get equal size cookies.
  • Place the cookie balls in a baking tray lined with 2 butter papers to avoid burning from bottom or use a silicone sheet.
  • Leave Space between cookies as they will spread while baking.
  • Press the cookies a little gently. Don't flatten it.
  • Put some chocolate chunks on the top of cookies and press a little.
  • Bake in a Pre-heated oven @ 180* C for 12-13 mins for chewy cookies and 16-18 mins for crispy cookies.
  • Once nicely baked, take out from the oven and add more dark chocolate chunks on top.
  • Cool the cookies completely.
  • Enjoy these chewy cookies with chocolate milk shake or a hot cup of coffee.

I consume it almost daily in various different forms and I keep on trying and making different tasty recipes so I and my family can consume it daily happily and enjoy it.

Healthy Oats & Nuts Mixture/Chivda - No Fry

Healthy oats chivda is a power-packed delicious crunchy & nutty snack made with healthy grains like oats, rice flakes loaded with lots of nuts, seeds & flavoured with tangy masalas.

Ingredients

Roasting the ingredients

  • 2 Cups Old fashioned oats (thick oats)
  • 1/2 Cup Thin Poha (rice flakes)
  • 1 Cup Lotus seeds (makhana)

Chivda/Namkeen Preparation

  • 3 tbsp Clarified butter (ghee)
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds (jeera)
  • 1/4th tsp Asafoetida (hing)
  • 10 pcs Curry leaves
  • 1/2 Cup Peanuts
  • 1/2 Cup Almonds
  • 1/2 Cup Cashewnuts
  • 1/4th Cup Pumpkin seeds
  • 1/4th Cup Sunflower seeds
  • 1/4th Cup Watermelon seeds
  • 1 tbsp Flaxseeds
  • 1 tbsp Sesame seeds
  • 1/4th Cup Raisins
  • Salt to taste
  • 2 tbsp Sugar powder
  • 1 tbsp Amchoor
  • 1 tsp Chaat masala
  • 1 tsp Roasted cumin powder
  • 1/2 tsp Turmeric powder

Instructions 

  • Take a broad heavy pan.
  • Roast the oats for 10-12 mins on low flame till crisp & light golden brown. Keep aside.
  • Roast Poha for 3-4 mins on low flame till crisp. Keep aside.
  • Roast Makhanas for 5-6 mins on low flame till crisp. Keep aside.
  • Take a broad pan. Add Ghee. Once ghee melts add mustard seeds, cumin seeds & Asafoetida(hing). Let it temper. Add Curry leaves and saute on medium flame till crisp.
  • Add peanuts & roast on low flame till crisp. Then add almonds & saute till crisp.
  • Add cashewnuts, dry coconut & saute on low flame till crisp.
  • Now add all the seeds, raisins & saute for 1 min.
  • Add the roasted oats, poha & makhanas & combine gently.
  • Add salt to taste & all the spices & mix well.
  • Roast for 2 more mins on low flame.
  • Healthy, crunchy Nutty snack is ready.
  • Cool completely & store in an air-tight container for upto 1 month.
  • Enjoy this delicious healthy oats chivda as a snack with a hot cup of tea or coffee.

Notes

  1. Use old-fashioned oats which are thicker and more flavourful & have a nice texture in comparison to instant oats.
  2. You can add more ghee to the mixture if you want.
  3. You can add any nuts and seeds of your choice to the mixture.
  4. Cool the chivda completely and then store it in an air-tight container.
  5. The  chivda will stay fresh for up to 1 month at room temperature.
