Cherry Almond Tea Cake

The buttery cherry almond tea cake is made with wheat & almond flour, with fresh juicy cherries for that fruity flavour & roasted sliced almonds for that extra crunch with sprinkled sugar for caramel flavour.

Ingredients

Cherry Almond Cake Batter

  • 1/2 cup Salted Butter (room temperature)
  • 1/2 cup Condensed milk (room temperature)
  • 4 tbsp Powdered sugar
  • 1 cup Wheat flour (atta)
  • 1/4th cup Custard powder/Cornflour
  • 1/4th cup Almond flour
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 cup Milk (room temperature)
  • 1 tsp Vanilla/Cherry essence
  • 1/2 cup Cherries (chopped)
  • 1/4th cup Almonds (roasted & sliced)
  • 1 tbsp Sugar

Instructions 

Cake batter

  • Take salted butter in a bowl and beat for 1 min. After 1 min, the butter will turn light in colour.
  • Add condensed milk to the butter and beat for 1 min.
  • Add powdered sugar and beat for 5 mins. After 5 mins, the mixture will be light and fluffy.
  • Sieve wheat flour, custard powder, baking soda and baking powder. Add almond flour & milk and vanilla essence. Beat till all combined. Don't over-mix the batter.
  • Add freshly chopped cherries and roasted sliced almonds and fold the batter gently till all mixed.
  • The cake batter is ready.
  • Grease an 8-inch loaf tin and line with baking paper.
  • Transfer the cake batter to the tin & level it. Garnish with cherries and almonds. Sprinkle sugar on top.
  • Bake in a pre-heated oven @ 180*C for 30 - 35 mins or till it comes clean.
  • After the cake is baked, take it out immediately from the oven and cool completely.
  • Slice it and enjoy this delicious bake with a hot cup of coffee or milkshake.

Notes

  1. If fresh cherries are not available, you can swap them with raisins, dates, nuts of your choice.
  2. All the ingredients used should be at room temperature.
  3. Wheat flour can be swapped with all-purpose flour.
  4. If you don't have a loaf tin, you can bake this cake in a 6 or 7 inch round cake tin.
  5. Cake batter should not be overmixed which will lead to a dense cake.
  6. Bake the cake in the middle rack of the oven with both the modes on.
  7. Cake can also be baked in a pan or pressure cooker in gas. It will take 40 - 45 mins.

Cheesy Healthy Pizza Muffins

Super soft & flavourful Cheesy Pizza muffins made with healthy flour, lots of veggies, instant pizza sauce, and cheese is a perfect Breakfast, Tea snack & Lunch box option for kids and everyone actually.

Ingredients

Instant Pizza Sauce

  • 1/2 cup Tomato ketchup
  • 2 tbsp Chilli/Schezwan sauce
  • 1 tsp Chilli flakes
  • 1 tsp Mixed herbs

Pizza Muffin Batter :

  • 1/2 cup Milk (plus 1 tbsp)
  • 1 tbsp sugar
  • 2 tbsp olive oil
  • 2 tbsp Fresh curd (yogurt/dahi)
  • 1/2 tsp salt
  • 1/2 cup Wheat flour (Atta)
  • 1/2 cup Semolina (suji)
  • 1 tbsp Cornflour
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 2 tbsp Onion (finely chopped)
  • 2 tbsp Capsicum (finely chopped)
  • 2 tbsp Tomato (finely chopped)
  • 1 tbsp Sweet corn
  • 1 tsp Jalapenos (finely chopped)
  • 1 tbsp Oregano
  • 1/2 tbsp Chilli flakes
  • 1 tbsp Instant pizza sauce (prepared)
  • 1/4th tsp Black pepper powder
  • 1/4th Cup Mozzarella cheese (grated)
  • 1 tbsp Back olives (sliced)

Instructions 

To Make Instant Pizza Sauce

  • In a bowl mix tomato ketchup, chilli sauce, chilli flakes, and mixed herbs and combine well. Instant pizza sauce is ready.

To Make Pizza Muffins

  • Pre-heat the oven @180* C for 10 mins & grease the muffin tray with butter.
  • In a bowl put milk, sugar, oil, fresh curd, salt and whisk well till combined.
  • Add Wheat flour, semolina, Cornflour, baking powder, baking soda, onions, capsicum, tomatoes, sweet corn, jalapenos, oregano, chilli flakes, instant pizza sauce, black pepper & mozzarella cheese. Combine and fold gently till all mixed.
  • Cover the cups with 1/2 the batter. Put some instant pizza sauce and spread. Sprinkle some mozzarella cheese. Cover with the batter and level it.
  • Garnish with some veggies, instant pizza sauce, mozzarella cheese, chilli flakes, pizza herbs and slice black olives.
  • Bake in a pre-heated oven @180*C in the middle rack for 25 mins or till it comes clean.
  • Once baked, take it out from the oven and brush the muffins with butter while its hot.
  • Enjoy these delicious cheesy savoury beauties with a hot cup of coffee.

Notes

  1. Store-bought pizza sauce can also be used.
  2. Add any veggies of your choice. Make sure they are finely chopped.
  3. Don't overmix the muffin batter. Overmixing leads to hard dense muffins.
  4. Make sure to pre-heat the oven @ 180* C for 10 mins before placing the muffins for baking.
  5. Place the muffin tray in the middle rack.
  6. You can swap wheat flour with oats flour.

World's Best Double Chocolate Chip Cookies

My best Eggless, Chewy, Double Chocolatey & Gooey Cookies are the most perfect cookies you will ever make. These sweet beauties are made with wheat flour & loads of chocolate 🍫chunks.

Ingredients

  • 1 cup Wheat flour
  • 1 tbsp Cornflour
  • 2 tbsp Cocoa powder
  • 1/3rd cup Butter (melted)
  • 1/4th cup Caster sugar/Fine sugar
  • 1/2 cup Light/Dark brown sugar
  • 1/4th cup Milk
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/4th tsp Salt
  • 1/4th tsp Instant coffee
  • 1/4th cup Choco chips
  • 1/4th cup Dark chocolate chunks

Instructions 

  • In a bowl, take caster sugar, brown sugar, and melted butter. Whisk for 2 mins.
  • Add milk and vanilla extract. Whisk for 2 mins.
  • Sieve all dry ingredients: Wheat flour, Cornflour, Cocoa powder, Baking soda, Salt.
  • Add instant coffee powder and combine & fold gently till all comes together. Don't overmix.
  • Add choco chips and dark chocolate chunks and fold gently.
  • Cookie batter is ready. Cover with a cling film and refrigerate for 30 mins.
  • After 30 mins, take it out from the fridge and shape it into balls. Use a scoop or a spoon to get equal size cookies.
  • Place the cookie balls in a baking tray lined with 2 butter papers to avoid burning from bottom or use a silicone sheet.
  • Leave Space between cookies as they will spread while baking.
  • Press the cookies a little gently. Don't flatten it.
  • Put some chocolate chunks on the top of cookies and press a little.
  • Bake in a Pre-heated oven @ 180* C for 12-13 mins for chewy cookies and 16-18 mins for crispy cookies.
  • Once nicely baked, take out from the oven and add more dark chocolate chunks on top.
  • Cool the cookies completely.
  • Enjoy these chewy cookies with chocolate milk shake or a hot cup of coffee.

Chocolate Mud Cake With Easiest ChocolateFudge Frosting

The Chocolate Mud Cake is a dense, moist, fudgy & delicious cake. It’s like a cross between a brownie, fudge, and chocolate cake. It’s thick, rich, and chocolatey.

Ingredients

Cake Batter Preparation

  • 1 1/4th Cup Salted butter (room temperature)
  • 1 Cup Dark chocolate (Finely chopped)
  • 1 1/4th Cup Milk (room temperature)
  • 1 1/4th Cup Sugar
  • 1/4th Cup Cocoa powder
  • 1 tbsp Coffee powder
  • 1 tbsp Hot water
  • 1 tsp Vanilla extract
  • 1 1/2 Cup Wheat flour
  • 1/4th Cup Cornflour
  • 2 tsp Baking powder
  • 1/4th tsp Baking soda
  • 1 Cup Thick curd/Yogurt

Easiest Chocolate Fudge Frosting

  • 1 Cup or 125 gms Salted butter
  • 1/2 Cup or 100 gms Powdered sugar
  • 2 Cups/250 gms Dark chocolate (Finely chopped)
  • 1 Cup Whipping/Heavy cream
  • 1 tbsp Cocoa powder
  • 1 tsp Vanilla extract
  • 1/2 tsp Coffee powder

Instructions 

Baking the Mud Cake

  • Preheat your oven @180*C  for 10 mins and Line 1 8inch cake tin with parchment paper & grease with butter or oil.
  • Take a Pan add butter, milk, dark chocolate & mix on low flame till all is melted. Then add sugar, cocoa powder, coffee concoction(coffee +hot water), and vanilla extract. Mix & cook on low flame. When it starts boiling, switch off the gas & cool the chocolate sauce completely.
  • In a bowl, sieve Wheat flour, cornflour, baking powder & baking soda. Keep aside.
  • In a bowl, take fresh curd and whisk till smooth. Add the cooled chocolate sauce. Whisk till all mixed. Put the prepared flour in intervals & combine gently till smooth batter. Don't Over-mix the batter.
  • Transfer the cake batter into a prepared cake tin. Place the cake tin in the middle rack of the oven & bake in a pre-heated oven for 60 - 65 mins @180*C or until the tester when inserted into the center comes clean.
  •  Once the cake is baked, remove it from the oven and allow it to cool completely.

Easiest Chocolate Fudge Frosting 

  • Take a Pan. Add butter, sugar, dark chocolate, whipping cream, cocoa powder, vanilla extract & coffee powder. Cook & on low flame till all is melted. Once melted, switch off the gas.
  • Transfer and Cool the chocolate frosting sauce completely. Refrigerate for 2 hrs or freeze it for 1 hr or till you get smooth silky thick frosting.

Method to apply the Easiest Chocolate Fudge Frosting to the Mud Cake

  • Coat the cake with the fudge frosting and pipe it with your favourite nozzle(used 21 no.)  and dust it with cocoa powder.
  • Serve & enjoy the Sinful fudgy Chocolate Mud Cake with the easiest fudge frosting for birthday parties, desserts or as a tea time snack.
