Schezwan Chilli Potatoes

Ingredients

Coating Potatoes

  • 350 grams Baby Potatoes (boiled & cooled completely)
  • 1 tsp Salt
  • 1 tsp Red chilli powder
  • 1/2 tsp Black pepper powder
  • 1 tbsp Cornflour
  • 1 tbsp Refined oil (Light olive oil can also be used)

Roasting Potatoes

  • Coated potatoes
  • 2 tbsp Refined oil (Light olive oil can also be used)

Schezwan Spicy Chilli Sauce

  • 2 tbsp Refined oil (Light olive oil can also be used)
  • 2 tbsp Garlic (finely chopped)
  • 1/2 tbsp Ginger (finely chopped)
  • 1 Onion (finely chopped)
  • 1 cup Capsicum (sliced)
  • Salt to taste
  • 3 tbsp Schezwan chutney
  • 1 tbsp Tomato ketchup
  • 1 tbsp Chilli sauce
  • 1 tbsp Butter
  • 1 tsp Soya sauce
  • 1 tsp Chilli flakes
  • 2 tsp Mixed herbs
  • 2 tsp Sesame seeds
  • Spring onion leaves

Instructions 

Coating Potatoes

  • Coat the boiled potatoes with salt, red chilli powde, black pepper powder,cornflour and oil.Combine well

Roasting Potatoes

  • Take oil in pan and roast the coated potatoes till golden brown & crisp.

Schezwan Spicy Chilli Sauce

  • From the remaining oil from roasted potatoes, saute garlic & ginger for 1 min on medium flame.
  • Add onions and saute for 1 min. Once onion turns translucent, add capsicum and saute for 1 min.Add salt & mix.
  • Add schezwan chutney,tomato ketchup,chilli sauce,butter,soya sauce, red chilli flakes,mixed herbs. Combine.
  • Add roasted potatoes and combine well. Add sesame seeds & combine again.
  • Garnish with spring onion leaves & sesame seeds.
  • Serve hot and enjoy.

Notes

  1. Baby potatoes should be boiled & cooled completely.
  2. All-purpose flour(maida) can also be used for coating potatoes instead of cornflour.
  3. Don't overcook the capsicums. The crunchiness of capsicums gives a nice taste to the dish.
  4. You can add more schezwan chutney according to your spice buds.
  5. The same recipe can also be made with paneer, tofu and tastes equally great.
