Chocolate Mud Cake With Easiest ChocolateFudge Frosting

The Chocolate Mud Cake is a dense, moist, fudgy & delicious cake. It’s like a cross between a brownie, fudge, and chocolate cake. It’s thick, rich, and chocolatey.

Ingredients

Cake Batter Preparation

  • 1 1/4th Cup Salted butter (room temperature)
  • 1 Cup Dark chocolate (Finely chopped)
  • 1 1/4th Cup Milk (room temperature)
  • 1 1/4th Cup Sugar
  • 1/4th Cup Cocoa powder
  • 1 tbsp Coffee powder
  • 1 tbsp Hot water
  • 1 tsp Vanilla extract
  • 1 1/2 Cup Wheat flour
  • 1/4th Cup Cornflour
  • 2 tsp Baking powder
  • 1/4th tsp Baking soda
  • 1 Cup Thick curd/Yogurt

Easiest Chocolate Fudge Frosting

  • 1 Cup or 125 gms Salted butter
  • 1/2 Cup or 100 gms Powdered sugar
  • 2 Cups/250 gms Dark chocolate (Finely chopped)
  • 1 Cup Whipping/Heavy cream
  • 1 tbsp Cocoa powder
  • 1 tsp Vanilla extract
  • 1/2 tsp Coffee powder

Instructions 

Baking the Mud Cake

  • Preheat your oven @180*C  for 10 mins and Line 1 8inch cake tin with parchment paper & grease with butter or oil.
  • Take a Pan add butter, milk, dark chocolate & mix on low flame till all is melted. Then add sugar, cocoa powder, coffee concoction(coffee +hot water), and vanilla extract. Mix & cook on low flame. When it starts boiling, switch off the gas & cool the chocolate sauce completely.
  • In a bowl, sieve Wheat flour, cornflour, baking powder & baking soda. Keep aside.
  • In a bowl, take fresh curd and whisk till smooth. Add the cooled chocolate sauce. Whisk till all mixed. Put the prepared flour in intervals & combine gently till smooth batter. Don't Over-mix the batter.
  • Transfer the cake batter into a prepared cake tin. Place the cake tin in the middle rack of the oven & bake in a pre-heated oven for 60 - 65 mins @180*C or until the tester when inserted into the center comes clean.
  •  Once the cake is baked, remove it from the oven and allow it to cool completely.

Easiest Chocolate Fudge Frosting 

  • Take a Pan. Add butter, sugar, dark chocolate, whipping cream, cocoa powder, vanilla extract & coffee powder. Cook & on low flame till all is melted. Once melted, switch off the gas.
  • Transfer and Cool the chocolate frosting sauce completely. Refrigerate for 2 hrs or freeze it for 1 hr or till you get smooth silky thick frosting.

Method to apply the Easiest Chocolate Fudge Frosting to the Mud Cake

  • Coat the cake with the fudge frosting and pipe it with your favourite nozzle(used 21 no.)  and dust it with cocoa powder.

Notes

  1. All Ingredients should be at room temperature.
  2. Don't overmix the cake batter as it will lead to a very dense cake.
  3. If your frosting is not setting or becoming thick, refrigerate or freeze for some more time
  4. Leftover frosting can be stored in an air-tight container.
  5. Cake can be stored and will stay fresh in the refrigerator for up to 3 days.
  6. Microwave on high for 1 min a slice of cake if you want to eat it warm & can be paired with vanilla ice cream.
